My sweet baby is teething and let me just say, no one warns you about this new milestone. August has been waking up on the hour every hour for the past week. My poor little buddy is in pain. He isn’t 6 months yet so, his physician said we could use Tylenol and that is pretty much it. I have tried the Amber necklace and I can’t tell a difference. We are using orajel but it’s so temporary. The only thing that really helps is frozen pops. You can read about those here.
We are all exhausted and cooking in this house has to be easy! Last night I made a Cowboy Bowl. Check out the recipe below.
Ingredients
- 1 Cup of uncooked rice
- 1 Tbsp of cilantro seasoning
- 1 Tsp of chili powder
- 1 Tsp of garlic salt
- 1 Tbsp of olive oil
- Cooking spray
- 1 Medium sized diced white onion
- 1 Can of corn
- 1 Can of black beans
- 1 Avocado
- 2 Cups of frozen shrimp deveined
- 1 Lemon
- 3 Eggs
- 1/2 Cup of Cheese
Instructions
- Follow the instructions on your rice package and start your rice.
- Pre-heat your oven to 350 degrees.
- Drain and rinse your black beans. Put them in a large pot on the stove.
- Saute your onions using olive oil. Mix them into the beans once they are translucent.
- Drain and rinse your corn. Add them into your beans occasionally stirring.
- Add the chili powder, garlic salt, and cilantro into your beans.
- Scramble up all 3 eggs. Once they have been scrambled, mix them into your beans.
- Once your rice has cooked, add it to the bean mixture.
- Grab a casserole dish and lightly spray it with your cooking spray.
- Add the bean mixture to the dish.
- Sprinkle the cheese on top.
- Saute your shrimp and add the juice from your lemon to them.
Notes
Spoon your mixture from the bean dish into a serving bowl. Add an avocado slice to the side and a serving of shrimp to the top. Enjoy!
