My New Favorite

Having a new baby is no joke. We have had no time for hardly anything. I have managed to keep our kitchen clean because who wants to clean before they can cook? There also hasn’t been a ton of cooking because we have been surviving on nasty fast food for the most part.

I got about a 40 minute “mommy” break today while my husband was on a work call and the baby was sleeping. I used it to go for a quick run. When I came back I realized that I was starving and a cold sandwich just wasn’t appealing.

I absolutely love anything spinach!

Spinach Bean Burrito

Spinach Bean Burrito

Ingredients

  • 1 lb of Spinach Chopped
  • 4 oz of Cream Cheese
  • 1 small Diced Yellow Onion
  • 1 small Diced Poblano Pepper
  • 4 Soft Flour Tortillas
  • 1 15 oz can of Black Beans
  • 1 tsp of Garlic Salt
  • 1 tsp of Black Pepper
  • 1 tbsp of Olive Oil

Instructions

  1. Sauté the onion and poblano pepper using the olive oil for about 3-4 minutes or until your onion is translucent
  2. Rinse and drain your black beans and add them to the onion and peppers
  3. After your beans have cooked for about 3 minutes add your spinach, black pepper, and garlic salt
  4. You will cook your spinach, slightly stirring until the leaves have wilted
  5. Finally add the cream cheese into the pan stirring the entire time
  6. Once all the ingredients have been combined spoon the ingredients into warm tortillas and enjoy

Notes

You can top the burritos with sour cream, cheese, salsa, and avocados!
