Veggie Chili

Football season has officially started and I am pumped about the cooler mornings we have been getting here in South Carolina. I may be jumping the gun a little here because it’s still getting up into the 90’s but I just can’t help myself. This recipe is extremely easy and tasty.

I have tried for the past month to have meatless Mondays in our house. My husband believes that every meal should have meat, so this isn’t always a big hit however; he loved this chili and has asked for me to make it again.

Veggie Chili

Cook Time: 3 hours

Total Time: 3 hours, 30 minutes

Veggie Chili

Ingredients

  • 32 oz can of crushed tomatoes
  • 16 oz can of black beans
  • 16 oz can of pinto beans
  • 16 oz can of corn
  • 1 packet of taco seasoning
  • 4 frozen chipotle veggie burgers
  • 1 bag of frozen diced sweet potatoes
  • 5 cups of veggie stock

Instructions

  1. Follow the instructions on the frozen sweet potato bag and cook your potatoes
  2. Follow the instructions on the veggie burger bag and cook your burgers. You will need to then crumble them up after they have been cooked
  3. Add the rest of your ingredients into a crock pot
  4. Cook on high for 3 hours and enjoy

Notes

You can add cheese, peppers, salsa, and or sour cream to top your chili off!
