Football season has officially started and I am pumped about the cooler mornings we have been getting here in South Carolina. I may be jumping the gun a little here because it’s still getting up into the 90’s but I just can’t help myself. This recipe is extremely easy and tasty.
I have tried for the past month to have meatless Mondays in our house. My husband believes that every meal should have meat, so this isn’t always a big hit however; he loved this chili and has asked for me to make it again.
Veggie Chili
Ingredients
- 32 oz can of crushed tomatoes
- 16 oz can of black beans
- 16 oz can of pinto beans
- 16 oz can of corn
- 1 packet of taco seasoning
- 4 frozen chipotle veggie burgers
- 1 bag of frozen diced sweet potatoes
- 5 cups of veggie stock
Instructions
- Follow the instructions on the frozen sweet potato bag and cook your potatoes
- Follow the instructions on the veggie burger bag and cook your burgers. You will need to then crumble them up after they have been cooked
- Add the rest of your ingredients into a crock pot
- Cook on high for 3 hours and enjoy
Notes
You can add cheese, peppers, salsa, and or sour cream to top your chili off!
