Veggie Quesadillas

I have been very successful in tricking my husband who is a giant meat lover into eating and liking dishes that are meat free. Don’t get me wrong, I am not a vegetarian. I totally think I could be one if I wasn’t married to my husband. We all know that meat has cholesterol and it is higher in fat than our lovely plants, so I try and limit how much of it I cook.

These quesadillas were super easy to make and I really just used left over items we had in the kitchen.

Veggie Quesadilla

Cook Time: 15 minutes

Veggie Quesadilla

Ingredients

  • 2 Medium Sized Sweet Potatoes Peeled and Cooked
  • 1 Avocado
  • 1 15 oz Can of White Pinto Beans
  • 1 Handful of Chopped Spinach
  • 1 Tsp of Garlic Powder
  • 1 Tsp of Cilantro
  • 4 7 Inch Flour Tortillas
  • Non-stick cooking spray

Instructions

  1. Preheat your over to 350 degrees
  2. Leaving your tortillas to the side, dump the rest of your ingredients into a large mixing bowl

  4. Using a mixer, you will mix everything together
  5. Spoon the mixture into the tortillas
  6. Spray a cookie sheet with the cooking spray
  7. Place the tortillas folded over onto the cookie sheet
  8. Put the quesadillas into the oven for about 10-15 minutes or until golden brown

Notes

These are easy to burn so keep an eye on them. Once they are golden brown it is time to take them out. You can enjoy them with sour cream, guacamole, and salsa.
